Air-Fryer Indian Mango Chutney Chicken Skewers preparation stage

You’ll Need

600g chicken thighs, cut into chunky pieces
1 tbsp vegetable oil

Indian Spice Mix
1 tsp garam masala
1 tsp smoked paprika
1 tsp ground cumin
½ tsp turmeric
1 tsp sea salt
½ tsp black pepper
1 clove garlic, finely grated
1 tsp grated ginger

Mango Glaze
3 tbsp mango chutney
1 tsp lime juice
1 tsp chilli flakes
1 tsp soy sauce

To Finish
Fresh coriander
Lime wedges

Optional but Dangerous
Mint yoghurt dip
Warm naan bread
Pickled onions

Method

Preheat your air fryer to 200°C.

In a bowl mix together the oil, garam masala, smoked paprika, cumin, turmeric, salt, black pepper, garlic, and ginger.

Add the chicken and coat thoroughly.

Thread the chicken onto skewers, leaving small gaps between pieces.

Place the skewers into the air fryer basket in a single layer.

Air fry at 200°C for 10–12 minutes, turning halfway through.

Meanwhile mix together the mango chutney, lime juice, chilli flakes, and soy sauce.

During the final 3 minutes of cooking, brush the skewers generously with the mango glaze.

Return to the fryer until sticky, glossy, and lightly caramelised around the edges.

Finish with fresh coriander and lime wedges.

Serve immediately with naan bread or mint yoghurt if using.

Lad Tip: Mango chutney caramelises quickly. Sticky and golden is exactly what you want. Black and smoking means you've been distracted by your phone and India has punished you for it.
