Introduction

Ireland understands comfort food. Not flashy comfort food. Not trendy comfort food. The sort of food that arrives on a cold evening, fills the kitchen with the smell of butter, potatoes, herbs, and fish, and immediately improves everybody's mood. This tray combines flaky haddock, buttery potatoes, garlic, parsley, and a little lemon into something simple, hearty, and ridiculously satisfying. The sort of meal you'd happily eat in a seaside pub overlooking the Atlantic while the weather does something dramatic outside.

You’ll Need

4 haddock fillets
600g baby potatoes, halved
2 tbsp butter, melted
1 tbsp olive oil
3 cloves garlic, finely sliced
1 tsp sea salt
½ tsp black pepper
1 tsp dried parsley
Juice of ½ lemon
Small handful fresh parsley, chopped
Optional but Dangerous
Peas
Crusty bread
Tartare sauce
Extra butter

Method

Preheat your air fryer to 200°C.

Toss the potatoes with the olive oil, half the melted butter, garlic, salt, black pepper, and dried parsley.

Place the potatoes into the air fryer basket and cook for 12 minutes, shaking halfway through.

Pat the haddock dry using kitchen paper.

Brush the fillets with the remaining melted butter.

Place the haddock on top of the potatoes.

Air fry everything together at 190°C for 10–12 minutes until the fish flakes easily and the potatoes are golden and crisp.

During the final minute, drizzle over the lemon juice.

Allow everything to rest for 1 minute.

Finish with fresh parsley.

Serve immediately with peas, bread, or tartare sauce if using.

Lad Tip: Irish cooking has survived generations because it knows a simple truth: butter fixes most problems. If you're wondering whether the fish could use a little more melted butter before serving, the answer is almost certainly yes.
