Air-Fryer Kebab House Garlic Chicken Boxes preparation stage

Every kebab shop has one customer who orders this every single time. Not because they're adventurous. Because they already know they've found perfection. Juicy garlic-marinated chicken, crispy chips, shredded salad, garlic sauce, chilli sauce, and enough flavour packed into one tray to make cutlery completely optional. This is proper Friday-night takeaway food. Without the delivery fee.

You’ll Need

600g chicken thighs, sliced into strips
400g frozen thick-cut fries, 1 tbsp olive oil

Garlic Chicken Marinade
3 tbsp Greek yoghurt, 4 cloves garlic, finely grated
1 tsp smoked paprika, 1 tsp ground cumin
1 tsp oregano, 1 tsp salt, ½ tsp black pepper, Juice of ½ lemon

Garlic Sauce
4 tbsp mayonnaise
2 tbsp Greek yoghurt, 2 cloves garlic, finely grated
Small squeeze of lemon

Salad
Handful shredded lettuce
½ red onion, sliced thin
1 tomato, diced

Optional but Dangerous
Chilli sauce
Pickled chillies
Jalapeños
Crumbled feta

Method

Preheat your air fryer to 200°C.

Mix together the yoghurt, garlic, smoked paprika, cumin, oregano, salt, black pepper, olive oil, and lemon juice.

Add the chicken and coat thoroughly.

Leave to marinate for 20 minutes if you've got time.

Cook the fries according to packet instructions until deeply golden and crisp.

Place the chicken into the air fryer basket in a single layer.

Air fry at 200°C for 12–14 minutes, shaking halfway through, until lightly charred around the edges and cooked

through.

Meanwhile mix together all the garlic sauce ingredients until smooth.

Pile the fries into a large takeaway-style tray.

Top with the garlic chicken.

Scatter over the lettuce, red onion, and tomato.

Drizzle heavily with garlic sauce.

Add chilli sauce, pickled chillies, jalapeños, or feta if using.

Serve immediately while hot, messy, and impossible to eat neatly.

Lad Tip: A proper kebab box should require at least three napkins and a moment halfway through where you wonder whether you've made too much. You haven't. Keep going.
