Air-Fryer Kung Pao Chicken Bites preparation stage

You’ll Need

600g chicken thighs, diced, 1 tbsp vegetable oil, 2 cloves garlic, crushed
1 red chilli, sliced, 1 tbsp light soy sauce, 1 tbsp dark soy sauce
1 tbsp sweet chilli sauce, 1 tsp brown sugar, 50g roasted peanuts
1 spring onion, sliced, Black pepper

Optional but Dangerous
Extra chilli oil
Fresh coriander
Extra peanuts
Sliced red chillies

Method

Preheat your air fryer to 200°C.

Add the chicken, oil, garlic, chilli, soy sauces, sweet chilli sauce, brown sugar, and black pepper into a bowl.

Mix thoroughly until fully coated.

Place the chicken into the air fryer basket in a single layer.

Air fry at 200°C for 12–14 minutes, shaking halfway, until lightly charred round the edges and cooked through.

Add the peanuts during the final 3 minutes so they toast slightly in the heat.

Toss through the spring onions immediately after cooking.

Finish with coriander, extra peanuts, chilli oil, or sliced chillies if using. Serve immediately while still hot and sticky.

Lad Tip: Kung Pao works because nothing dominates. Sweet, spicy, salty, crunchy, and savoury all turn up together. If one flavour starts shouting louder than the others, pull it back and let the balance do the work.
