Introduction
This is the sort of fish dish that Mediterranean fishermen have been making for generations. Fresh sea bass. Garlic. Lemon. Olive oil. A handful of herbs. Nothing complicated because good fish doesn't need rescuing. The foil traps all the steam, the garlic softens into the oil, and the sea bass stays beautifully moist while the air fryer does the heavy lifting. Simple food. Properly done.
You’ll Need
2 sea bass fillets
2 tbsp extra virgin olive oil
3 cloves garlic, sliced paper-thin
1 lemon, sliced
1 small courgette, sliced thin
1 small red pepper, sliced thin
1 tsp dried oregano
1 tsp sea salt
½ tsp black pepper
Small handful fresh parsley, chopped
Optional but Dangerous
Green olives
Crusty bread
Aioli
Extra lemon wedges
Method
Preheat your air fryer to 180°C.
Lay out two large sheets of foil.
Divide the courgette and red pepper between the parcels.
Place a sea bass fillet on top of each vegetable pile.
Drizzle with olive oil.
Scatter over the sliced garlic, oregano, salt, and black pepper.
Lay the lemon slices over the fish.
Sprinkle over half the parsley.
Fold the foil into loose parcels, leaving enough room inside for steam to circulate.
Place the parcels into the air fryer basket.
Air fry at 180°C for 10–12 minutes until the fish flakes easily with a fork.
Carefully open the parcels and finish with the remaining parsley.
Serve immediately with crusty bread, olives, and extra lemon wedges if using.
