Air-Fryer Lemon Ricotta Cake Pots

Air-fryer lemon ricotta cake pots from Sweet Munch, built for hot pastry, molten centres, sticky sugar and proper dessert chaos.

This is what happens when a sponge cake spends a summer in Sicily. Soft ricotta sponge. Fresh lemon. Golden tops. Creamy centres. The sort of dessert that feels surprisingly light right up until you realise you've eaten two pots and are already

You’ll Need

150g ricotta cheese
75g caster sugar
2 eggs
100g self-raising flour
Zest of 1 lemon
2 tbsp lemon juice
25g melted butter
1 tsp vanilla extract
For The Finish
1 tbsp icing sugar
Extra lemon zest
Optional But Dangerous
Lemon curd
White chocolate shavings
Vanilla ice cream

Method

Preheat your air fryer to 160°C.

Lightly grease four ramekins or foil pudding pots.

In a bowl, whisk together the ricotta, caster sugar, eggs, melted butter, vanilla extract, lemon zest, and lemon

juice until smooth.

Fold through the flour until just combined.

Divide the mixture evenly between the pudding pots.

Air fry at 160°C for 12–15 minutes until risen, lightly golden, and cooked through.

Allow to cool for 5 minutes.

Dust lightly with icing sugar.

Finish with extra lemon zest before serving.

Serve warm or at room temperature.

Lad Tip: Ricotta keeps the sponge soft long after it cools. If the cakes feel slightly creamy in the middle, that's exactly what you're aiming for. Sicily would consider that a compliment, not a problem.
