This is what happens when dirty fries stop pretending to be a side dish. Crispy fries loaded with smoky beef mince, melted cheese, jalapeños, nacho sauce, salsa, and enough toppings to make structural engineering a genuine concern. Every takeaway has that one tray that arrives looking completely out of control. This is that tray. And it's magnificent.
You’ll Need
400g frozen thick-cut fries, 500g beef mince
1 small onion, finely diced, 1 tbsp olive oil
Taco Beef Seasoning
1 tsp smoked paprika, 1 tsp ground cumin
1 tsp garlic powder, 1 tsp chilli powder
1 tsp salt, ½ tsp black pepper

100g grated cheddar
100g grated mozzarella
1 handful sliced jalapeños
4 tbsp salsa
Nacho Sauce
50g cheddar cheese
50ml milk
1 tsp garlic powder
To Finish
Spring onions, sliced
Fresh coriander
Optional but Dangerous
Guacamole
Sour cream
Hot sauce
Crushed tortilla chips
Method
Preheat your air fryer to 200°C.
Cook the fries according to packet instructions until deeply golden and crispy.
Meanwhile place the beef mince, onion, olive oil, and all the taco seasoning into a foil tray or heatproof dish.
Air fry at 190°C for 10–12 minutes, stirring halfway, until browned and slightly crispy around the edges.
For the nacho sauce, gently heat the milk and cheddar together until smooth and glossy.
Pile the cooked fries into a large serving tray.
Scatter over the taco beef.
Add both cheeses generously.
Return to the air fryer at 180°C for 2–3 minutes until the cheese melts and bubbles.
Remove carefully.
Drizzle over the nacho sauce.
Top with salsa, jalapeños, spring onions, and coriander.
Finish with guacamole, sour cream, hot sauce, or crushed tortilla chips if using.
Serve immediately while everything is still molten and gloriously unstable.
