Air-Fryer Lobster Roll Style Subs preparation stage

You’ll Need

300g cooked lobster meat, crayfish tails, or luxury seafood mix
2 brioche-style sub rolls
2 tbsp mayonnaise
1 tbsp melted butter
1 celery stick, very finely diced
1 tbsp chopped chives
Juice of half a lemon
1 tsp sea salt
½ tsp black pepper

Optional but Dangerous
Extra melted butter
Paprika dusting
Crispy lettuce
Garlic aioli
Cold lager

Method

1 - Preheat your air fryer to 180°C.

2 - In a bowl combine the seafood, mayonnaise, celery, chives, lemon juice, salt, and black pepper.

3 - Mix gently so the seafood stays chunky and doesn't turn into expensive paste.

4 - Brush the rolls lightly with melted butter.

5 - Place the rolls into the air fryer for 2–3 minutes until lightly toasted and golden around the edges.

6 - Remove and allow them to cool for a minute.

7 - Pile the seafood mixture generously into the warm rolls.

8 - Finish with a light dusting of paprika if using.

9 - Serve immediately while the bread is still warm and the filling is still cold and fresh.

Lad Tip: The correct amount of filling is always slightly more than the roll can comfortably handle. If seafood starts escaping down the sides halfway through eating it, you've judged the ratio perfectly.
