Air-Fryer Louisiana Blackened Chicken Bites preparation stage

You’ll Need

600g chicken thighs, cut into bite-sized chunks
1 tbsp olive oil

Blackening Seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp dried oregano
½ tsp cayenne pepper
1 tsp sea salt
½ tsp black pepper

To Finish
Juice of ½ lemon
Fresh parsley

Optional but Dangerous
Ranch dip
Potato wedges
Corn on the cob
Hot sauce

Method

Preheat your air fryer to 200°C.

In a bowl mix together all the blackening seasoning ingredients.

Add the chicken and olive oil.

Toss thoroughly until every piece is heavily coated.

Place the chicken into the air fryer basket in a single layer.

Air fry at 200°C for 12–14 minutes, shaking halfway through.

Continue cooking until the chicken develops dark roasted edges and is fully cooked through.

Finish with a squeeze of lemon juice and fresh parsley.

Serve immediately with ranch dip, wedges, or your chosen sides.

Lad Tip: Blackened chicken should look darker than feels comfortable the first time you make it. That's where the flavour lives. Charred seasoning is good. Burnt chicken is not. There's a difference, and Louisiana has spent generations mastering it.
