Air-Fryer Magdalenas Lemon Sponge Cups

Air-fryer magdalenas lemon sponge cups from Sweet Munch, built for hot pastry, molten centres, sticky sugar and proper dessert chaos.

You’ll Need

100g softened butter
100g caster sugar
2 eggs
100g self-raising flour
Zest of 1 lemon
1 tbsp lemon juice
2 tbsp milk
For The Finish
1 tbsp caster sugar
Light dusting of icing sugar
Optional But Dangerous
Lemon curd
White chocolate drizzle
Vanilla ice cream

Method

Preheat your air fryer to 160°C.

Lightly grease six muffin cups, silicone moulds, or foil pudding cases.

In a bowl, beat together the butter and caster sugar until pale and fluffy.

Add the eggs one at a time, mixing well after each addition.

Fold through the flour, lemon zest, lemon juice, and milk until smooth.

Divide the mixture evenly between the moulds, filling each about two-thirds full.

Sprinkle a little caster sugar over the tops.

Air fry at 160°C for 10–12 minutes until risen, lightly golden, and cooked through.

Allow to cool for 5 minutes.

Dust lightly with icing sugar before serving.

Serve warm or completely cooled.

Lad Tip: The sugar sprinkled on top before baking creates the classic crackled Magdalenas finish. If the tops split slightly and turn golden, you've done exactly what every Spanish grandmother wanted you to do.
