500g baby potatoes, halved
1 large onion, sliced
1 tbsp olive oil

1 tbsp maple syrup
1 tsp honey
1 tsp apple cider vinegar
½ tsp smoked paprika
½ tsp black pepper
To Finish
Fresh parsley
Extra mustard
Optional but Dangerous
Crusty bread
Fried eggs
Pickles
Cold lager
Method
1 - Preheat your air fryer to 200°C. 2 - Toss the potatoes with the olive oil and a pinch of salt. 3 - Add the potatoes and sliced onion to the air fryer basket and cook for 8 minutes. 4 - Meanwhile, mix together the wholegrain mustard, maple syrup, honey, apple cider vinegar, smoked paprika, and black pepper. 5 - Add the sausages to the basket alongside the potatoes and onions. 6 - Brush the sausages generously with half of the maple mustard glaze. 7 - Air fry everything together for 12–14 minutes, turning the sausages halfway through. 8 - Brush over the remaining glaze during the final 4 minutes of cooking. 9 - Continue cooking until the sausages are deeply golden, the glaze is sticky and caramelised, and the potatoes are crisp. 10 - Finish with fresh parsley and an extra spoon of mustard if you're that way inclined. Serve immediately while hot, sticky, and smelling like a proper countryside pub.
