Introduction
The Nordic countries have spent centuries perfecting one simple idea: Take great fish and don't mess it up. Fresh trout, sharp pickled onions, dill, lemon, and a crisp golden finish are all you need. No heavy sauces. No complicated techniques. Just clean flavours that let the fish stay front and centre. This is the sort of food you'd find beside a cold lake, a fishing cabin, or a harbour café where the fish was probably swimming earlier that day. Simple. Fresh. Proper Scandinavian comfort food.
You’ll Need
4 trout fillets
2 tbsp olive oil
1 lemon, zested and juiced
1 tsp sea salt
½ tsp cracked black pepper
1 tsp fresh dill, finely chopped
For the Quick Pickled Onion
1 small red onion, sliced very thin
2 tbsp white wine vinegar
1 tsp sugar
Pinch of salt
To Finish
Extra fresh dill
Lemon wedges
Optional but Dangerous
Buttered new potatoes
Cucumber salad
Rye bread
Horseradish cream
Method
Preheat your air fryer to 200°C.
In a small bowl combine the vinegar, sugar, and pinch of salt.
Add the sliced red onion and leave to pickle while the fish cooks.
Pat the trout fillets dry with kitchen paper.
Brush with olive oil and season with lemon zest, salt, black pepper, and half the dill.
Lightly spray the air fryer basket with oil.
Place the trout fillets skin-side down into the basket.
Air fry at 200°C for 8–10 minutes until the trout flakes easily and the edges become lightly crisp.
During the final minute, drizzle over the lemon juice.
Allow the trout to rest for 1 minute before serving.
Top with the pickled onions and remaining fresh dill.
Serve immediately with potatoes, rye bread, or cucumber salad if using.
