Air-Fryer Old-school Bread Pudding

Air-fryer old-school bread pudding from Sweet Munch, built for hot pastry, molten centres, sticky sugar and proper dessert chaos.

It’s the sort of dessert that’s been keeping people warm for generations, and it hasn’t changed because it doesn’t need to. This one comes out hot, dark round the edges, soft in the middle, and absolutely crying out for custard or cream.

Air-Fryer Old-school Bread Pudding preparation stage

You’ll Need

Stale bread (white or mixed, torn into chunks)
Butter, Milk, Egg, Sugar
Mixed dried fruit (raisins, sultanas, currants)
Mixed spice or cinnamon

Optional but Encouraged
Nutmeg
Demerara sugar for the top
Custard or double cream

Method

1 - Preheat your air fryer to 170°C for 3–5 minutes.

2 - Lightly butter a small oven-safe dish or foil tray that fits in your air fryer.

3 - Pack the torn bread into the dish, scattering the dried fruit evenly throughout.

4 - In a bowl, whisk together the milk, egg, sugar, and mixed spice.

5 - Pour the mixture over the bread, pressing it down gently so everything soaks it up.

6 - Leave it to sit for 2–3 minutes if you can. This helps it go properly soft inside.

7 - Dot the top with small knobs of butter and sprinkle with a little demerara sugar if using.

8 - Cover loosely with foil.

9 - Air fry at 170°C for 14–18 minutes until set, hot through, and lightly crisped on top.

10 - Remove the foil for the final 2 minutes if you want a darker, firmer top. Let it sit for a minute before serving.

Lad Tip: This is meant to be dense. If it’s light and fluffy, you’ve made cake. Custard makes it complete. Cream is acceptable. Ice cream is pushing it, but not wrong. This reheats brilliantly the next day at 160°C for 4–5 minutes. If you’ve got leftover Christmas bread, this is where it belongs.
