Air-Fryer Pandan Coconut Banana Parcels preparation stage

You’ll Need

2 bananas, sliced lengthways
2 large tortilla wraps or flatbreads
3 tbsp coconut cream
1 tbsp brown sugar
1 tsp pandan extract
2 tbsp desiccated coconut
1 tbsp melted butter

To Finish
Toasted coconut flakes
Icing sugar

Optional but Dangerous
Vanilla ice cream
Extra coconut cream
Caramel sauce

Method

Preheat your air fryer to 180°C.

In a bowl, mix together the coconut cream, brown sugar, pandan extract, and desiccated coconut.

Lay the wraps flat and spread the pandan coconut mixture down the centre.

Place the banana slices on top.

Fold the sides in and roll tightly into sealed parcels.

Brush lightly with melted butter.

Place seam-side down into the air fryer basket.

Air fry at 180°C for 8–10 minutes, turning once halfway, until golden, crisp, and lightly caramelised.

Allow to rest for 1 minute before serving.

Finish with toasted coconut flakes and a light dusting of icing sugar. Serve warm while the banana remains soft and fragrant inside.

Lad Tip: Pandan is one of those flavours that doesn't shout. It sneaks up on you. If somebody takes a bite and immediately asks, “What is that?” you've probably got the balance exactly right.
