This is what happens when somebody looks at a cheesesteak and decides bread is slowing things down. Thin sliced beef. Fried onions. Peppers. Melted cheese. Crispy fries. Everything loaded into one tray and covered in enough steakhouse flavour to make napkins completely irrelevant. Messy. Cheesy. Dangerously easy to demolish. The sort of fakeaway that somehow disappears while everybody's still claiming they're full.
You’ll Need
500g beef steak (rump, sirloin, or frying steak), sliced very thin
400g frozen thick-cut fries
1 green pepper, sliced
1 small onion, sliced
2 cloves garlic, finely chopped
1 tbsp olive oil, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp salt
½ tsp black pepper
Cheese Sauce
25g butter
25g plain flour
250ml milk
150g cheddar cheese, grated
1 tsp mustard
To Finish
4 cheese slices
Spring onions, sliced
Optional but Dangerous
Jalapeños
BBQ sauce
Hot sauce
Extra cheese
Method
Preheat your air fryer to 200°C.
Cook the fries according to packet instructions until deeply golden and crispy.
Meanwhile toss the beef with the olive oil, smoked paprika, garlic powder, salt, and black pepper.
Place the beef, onion, pepper, and garlic into a foil tray.
Air fry at 200°C for 6–8 minutes, stirring halfway, until the beef is browned and the onions soften.
For the cheese sauce, melt the butter in a saucepan.
Stir in the flour and cook for 1 minute.
Gradually add the milk, stirring continuously.
Add the grated cheddar and mustard.
Cook until smooth, thick, and gloriously cheesy.
Pile the cooked fries into a large serving tray.
Scatter over the beef mixture.
Lay over the cheese slices.
Return to the air fryer for 1–2 minutes until melted.
Drizzle generously with the cheese sauce.
Finish with spring onions and any extras you're using.
Serve immediately while hot, cheesy, and structurally unstable.
