50g plain flour
2 eggs, beaten
4 thick slices white bread

Method

Preheat your air fryer to 200°C.

Cut the fish into thick finger-sized strips.

Season with salt and black pepper.

Coat each piece in flour, then egg, then breadcrumbs.

Spray lightly with oil.

Place into the air fryer basket in a single layer.

Air fry at 200°C for 10–12 minutes, turning halfway, until golden and crisp.

Butter the bread generously.

Load the fish fingers into the sandwich while they’re still hot.

Add tartare sauce if using.

Serve immediately.

Lad Tip: The butter is not optional. Dry fish finger sandwiches belong in prison canteens.
