You’ll Need

2 sea bass fillets
1 tbsp vegetable oil
1 small red onion, sliced
1 red chilli, sliced
Juice of 1 lime

For the Sambal
2 tbsp sambal oelek
1 tbsp tomato purée
1 tsp brown sugar
1 clove garlic, crushed
1 tsp grated ginger
1 tsp soy sauce

To Finish
Fresh coriander
Lime wedges
Spring onions

Optional but Dangerous
Extra sambal
Fresh chillies
Steamed rice

Method

Preheat your air fryer to 180°C.

In a bowl, mix together the sambal oelek, tomato purée, brown sugar, garlic, ginger, and soy sauce.

Lay out two large sheets of foil.

Divide the sliced onion and chilli between the parcels.

Place a sea bass fillet onto each foil sheet.

Spoon the sambal mixture generously over the fish.

Drizzle with lime juice and a little vegetable oil.

Fold the foil loosely into sealed parcels, leaving room for steam to circulate.

Place the parcels into the air fryer basket.

Air fry at 180°C for 10–12 minutes until the fish flakes easily and the sambal sauce becomes rich and fragrant.

Carefully open the parcels and finish with coriander, spring onions, and lime wedges. Serve immediately with steamed rice if using.

Lad Tip: Fish tells you when it's ready. The second it flakes apart easily with a fork, stop cooking. Island fishermen have been following that rule for generations and it still works perfectly.
