Air-Fryer Seafood Loaded Potato Skins preparation stage

You’ll Need

4 medium potatoes
1 tbsp olive oil
150g cooked prawns, chopped
100g crab meat or seafood sticks, chopped
100g grated mature cheddar
2 spring onions, sliced
1 tbsp mayonnaise
1 tsp lemon juice
Sea salt
Black pepper

Optional but dangerous
Chilli flakes
Garlic mayo
Extra cheese
Fresh parsley

Method

Preheat your air fryer to 200°C.

Rub the potatoes with olive oil and salt.

Air fry at 200°C for 35–40 minutes, turning halfway, until crisp outside and soft inside.

Let them cool slightly, then slice in half.

Scoop out some of the middle, leaving a solid potato shell.

In a bowl, mix the prawns, crab, mayonnaise, lemon juice, spring onions, black pepper and half the cheese.

Place the potato skins back into the air fryer for 5 minutes to crisp up.

Fill the skins with the seafood mixture.

Top with the remaining cheese.

Air fry for another 4–6 minutes until the cheese is melted, bubbling, and starting to brown.

Finish with parsley, chilli flakes or garlic mayo if using.

Serve hot.

Lad Tip: Don’t scoop the skins too thin. You’re building a loaded potato boat, not performing delicate surgery. Leave enough potato behind to hold the chaos.
