Air-Fryer Sichuan Mapo Beef Potato Pots preparation stage

You’ll Need

500g beef mince
500g potatoes, diced small
1 tbsp vegetable oil, 2 cloves garlic, crushed
1 tbsp light soy sauce, 1 tbsp chilli oil, 1 tsp smoked paprika
1 tsp Sichuan pepper, 1 tsp chilli flakes, 1 tsp salt
2 spring onions, sliced

Optional but Dangerous
Extra chilli oil
Fresh coriander
Extra Sichuan pepper
Crispy fried onions

Method

Preheat your air fryer to 200°C.

Toss the potatoes with half the oil, half the salt, and half the Sichuan pepper.

Air fry for 16–18 minutes, shaking halfway, until crisp and golden.

In a foil tray or heatproof dish, combine the beef mince, garlic, soy sauce, chilli oil, smoked paprika, chilli flakes, remaining salt, and remaining Sichuan pepper.

Air fry at 190°C for 10–12 minutes, stirring halfway, until deeply browned.

Add the cooked potatoes into the beef mixture and toss thoroughly.

Return to the air fryer for a final 3–4 minutes so everything crisps together properly.

Finish with spring onions, coriander, crispy onions, or extra chilli oil if using. Serve immediately while still steaming hot.

Lad Tip: Sichuan pepper isn't supposed to burn. It's supposed to confuse your mouth slightly before the chilli arrives. If your lips go a tiny bit numb and you immediately want another forkful, Chengdu would consider that a successful afternoon.
