Air-Fryer Smoky Beef Quesadilla Wedges preparation stage

You’ll Need

500g beef mince
4 large tortilla wraps
150g grated cheddar
100g grated mozzarella
1 small onion, finely diced
1 tbsp olive oil

Smoky Seasoning
1 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp sea salt
½ tsp black pepper
½ tsp chilli flakes

Optional but Dangerous
Jalapeños
Sour cream
Guacamole
Hot sauce

Method

Preheat your air fryer to 190°C.

Add the beef mince, onion, olive oil, and smoky seasoning to a foil tray or heatproof dish.

Air fry for 10–12 minutes, stirring halfway, until browned and loaded with flavour.

Allow the beef mixture to cool slightly.

Lay two tortilla wraps flat on a board.

Divide the beef mixture evenly between them.

Scatter generously with cheddar and mozzarella.

Add jalapeños if using.

Place the remaining tortilla wraps on top and press lightly.

Carefully transfer the quesadillas into the air fryer basket.

Air fry at 190°C for 4–5 minutes.

Carefully flip and cook for another 3–4 minutes until golden and crisp on both sides.

Remove and allow to rest for 1 minute.

Slice into wedges.

Serve immediately with sour cream, guacamole, or hot sauce if using.

Lad Tip: A proper quesadilla should leave a trail of melted cheese when you pull a wedge away. If everything stays perfectly tidy, you've either underfilled it or accidentally become far too responsible.
