Air-Fryer Smoky Saffron Potato Cubes preparation stage

You’ll Need

700g potatoes, peeled and cut into small cubes
2 tbsp extra virgin olive oil
1 tsp smoked paprika
½ tsp saffron
1 tsp garlic powder
1 tsp sea salt
½ tsp black pepper
Small handful fresh parsley, chopped

Optional but Dangerous
Aioli
Lemon wedges
Manchego cheese shavings
Cold Spanish lager

Method

Preheat your air fryer to 200°C.

Pat the potato cubes dry with kitchen paper. Dry potatoes equal crispy potatoes.

In a large bowl, combine the olive oil, smoked paprika, saffron, garlic powder, salt, and black pepper.

Add the potatoes and toss thoroughly until every cube is coated.

Place the potatoes into the air fryer basket in a single layer.

Air fry at 200°C for 18–22 minutes, shaking every 5–6 minutes, until deeply golden and crisp.

Finish with fresh parsley immediately after cooking.

Serve hot with aioli, lemon wedges, or Manchego if using.

Lad Tip: According to Manuel, the secret isn't the saffron. It's patience. Shake the basket too often and you'll bully the crust off the potatoes. Leave them alone and let Spain do the work.
