This is proper takeaway carnage. Sticky BBQ rib tips piled onto crispy fries, drowned in smoky sauce, loaded with melted cheese, crispy onions, and enough barbecue flavour to make napkins completely pointless. Sweet. Smoky. Messy. The sort of tray that arrives looking like a terrible life decision and tastes like one of your best.

1 tsp brown sugar

Method
Preheat your air fryer to 190°C.
Pat the rib tips dry thoroughly.
Mix together all the BBQ rub ingredients.
Coat the pork evenly.
Place into the air fryer basket in a single layer.
Air fry at 190°C for 18–22 minutes, turning halfway, until browned and cooked through.
Meanwhile mix together the BBQ sauce, honey, Worcestershire sauce, and brown sugar.
Toss the cooked rib tips through the glaze.
Return to the air fryer for 3–4 minutes at 200°C until sticky, glossy, and caramelised.
Cook the fries according to packet instructions until deeply golden and crispy.
Pile the fries into a large serving tray.
Scatter over the glazed rib tips.
Top with cheddar and mozzarella.
Return to the air fryer for 2–3 minutes until the cheese melts and bubbles.
Finish with crispy onions, spring onions, and any extras you're using.
Serve immediately while everything is still hot, sticky, and completely unreasonable.
