You’ll Need
600g sirloin, rump, or frying steak, cut into chunky bite-sized cubes
1 tbsp olive oil
1 tsp sea salt
1 tsp cracked black pepper
1 tsp smoked paprika
Bourbon Glaze
3 tbsp bourbon whiskey
2 tbsp brown sugar
2 tbsp BBQ sauce
1 tbsp honey
2 cloves garlic, grated
1 tsp Worcestershire sauce
½ tsp smoked paprika
To Finish
2 spring onions, sliced
Optional but Dangerous
Crispy onions
Loaded fries
Pickles
Extra glaze
Method
Preheat your air fryer to 200°C.
Toss the steak bites with the olive oil, salt, pepper, and smoked paprika.
Place into the air fryer basket in a single layer.
Air fry at 200°C for 6–8 minutes, shaking halfway, until deeply browned around the edges.
Meanwhile add the bourbon, brown sugar, BBQ sauce, honey, garlic, Worcestershire sauce, and smoked paprika to a saucepan.
Simmer gently for 3–4 minutes until thick, glossy, and sticky.
Tip the cooked steak bites into a large bowl.
Pour over the glaze and toss thoroughly until every piece is coated.
Return to the air fryer for a final 2 minutes at 200°C so the glaze caramelises onto the beef.
Finish with sliced spring onions.
Add crispy onions, pickles, loaded fries, or extra glaze if using.
Serve immediately while still sticky enough to cause problems.
