You’ll Need
600g pork loin or pork shoulder, cut into bite-sized chunks
1 tbsp olive oil
For the Marinade
3 tbsp sweet chilli sauce
1 tbsp soy sauce
2 cloves garlic, crushed
1 tsp smoked paprika
1 tsp honey
½ tsp black pepper
1 tsp sea salt
Juice of half a lime
To Finish
2 spring onions, sliced
Sesame seeds
Lime wedges
Optional but Dangerous
Steamed rice
Garlic mayo
Pickled chillies
Sriracha drizzle
Method
1 - Preheat your air fryer to 200°C. 2 - In a large bowl, mix together the sweet chilli sauce, soy sauce, garlic, smoked paprika, honey, black pepper, salt, and lime juice. 3 - Add the pork and coat thoroughly until every piece is loaded with marinade. 4 - Leave for 20 minutes if you've got time. If not, crack on. 5 - Thread the pork onto skewers, leaving small gaps between the pieces for airflow. 6 - Place the skewers into the air fryer basket in a single layer. 7 - Air fry at 200°C for 10–12 minutes, turning halfway through. 8 - During the final 2 minutes, brush over any remaining marinade so it caramelises onto the pork. 9 - Continue cooking until the pork develops dark sticky edges and is cooked through. 10 - Finish with spring onions, sesame seeds, and lime wedges. Serve immediately while hot, sticky, and slightly too easy to keep eating.
