You’ll Need

700g pork spare ribs, cut into sections, 1 tbsp vegetable oil, 3 tbsp light soy sauce
1 tbsp dark soy sauce, 1 tbsp brown sugar, 2 cloves garlic, crushed
1 tsp grated ginger, 1 tsp sesame oil, 1 tsp salt, ½ tsp black pepper

Optional but Dangerous
Spring onions
Sesame seeds
Chilli oil
Steamed rice

Method

Preheat your air fryer to 190°C.

Add the ribs to a large bowl.

Add the vegetable oil, light soy sauce, dark soy sauce, brown sugar, garlic, ginger, sesame oil, salt, and black pepper.

Toss thoroughly until every rib is fully coated.

Place the ribs into the air fryer basket in a single layer.

Air fry at 190°C for 20 minutes, turning halfway through.

Increase the temperature to 200°C and cook for a further 6–8 minutes until the glaze becomes dark, sticky, and caramelised round the edges.

Turn the ribs once more during the final few minutes so every surface picks up colour.

Finish with spring onions, sesame seeds, or chilli oil if using. Serve immediately while hot and sticky.

Lad Tip: The final few minutes are where Shanghai happens. If the glaze starts turning dark, glossy, and slightly aggressive-looking, leave it alone. That's flavour being built.
