Air-Fryer Tex-Mex Chicken Fajita Boxes preparation stage

You’ll Need

600g chicken thighs, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 large onion, sliced
1 tbsp olive oil

Fajita Seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
½ tsp chilli flakes
1 tsp sea salt
½ tsp black pepper

To Serve
Warm tortilla wraps
Sour cream
Salsa

Optional but Dangerous
Guacamole
Jalapeños
Grated cheddar
Hot sauce

Method

Preheat your air fryer to 200°C.

In a large bowl mix together all the fajita seasoning ingredients.

Add the chicken, peppers, onion, and olive oil.

Toss thoroughly until everything is fully coated.

Place into the air fryer basket in a single layer.

Air fry at 200°C for 14–16 minutes, shaking halfway through.

Continue cooking until the chicken is lightly charred around the edges and the vegetables are softened with slight caramelisation.

Warm the tortilla wraps during the final minute if desired.

Load everything into serving boxes or bowls.

Serve with sour cream, salsa, and any extras.

Lad Tip: Fajitas should look slightly chaotic. If every pepper strip is lined up neatly and nothing's fallen out of the wrap, you're worrying about presentation far more than Texas ever would.
