Air-Fryer Texan Beef Rib Bite Boxes preparation stage

You’ll Need

700g beef short ribs or beef rib chunks
500g frozen thick-cut fries
1 tbsp olive oil
1 tsp sea salt
1 tsp cracked black pepper
1 tsp smoked paprika
1 tsp garlic powder
½ tsp onion powder

Texas BBQ Glaze
4 tbsp BBQ sauce
1 tbsp honey
1 tsp Worcestershire sauce
1 tsp Dijon mustard
½ tsp smoked paprika

Optional but Dangerous
Pickles
Crispy onions
Jalapeños
Extra BBQ sauce

Method

Preheat your air fryer to 190°C.

Pat the beef rib pieces dry with kitchen paper.

Toss with olive oil, salt, pepper, smoked paprika, garlic powder, and onion powder.

Place into a foil tray or heatproof dish.

Air fry at 190°C for 20–25 minutes, stirring halfway, until browned and tender.

Meanwhile cook the fries according to packet instructions until crisp and golden.

Mix together all BBQ glaze ingredients.

Pour the glaze over the cooked beef rib bites and toss thoroughly.

Return to the air fryer for 4–5 minutes at 200°C until sticky and caramelised.

Transfer the fries into serving boxes or trays.

Top with the glazed beef rib bites.

Finish with pickles, crispy onions, jalapeños, or extra BBQ sauce if using.

Serve immediately while everything is still hot and gloriously sticky.

Lad Tip: Proper BBQ beef should leave evidence. If your fingers, plate, and at least one napkin aren't covered in sauce by the end, you've been far too careful with the glaze.
