Bread Story
Lavash has been part of Armenian kitchens for centuries. Thin, light and wonderfully versatile, this traditional flatbread becomes beautifully crisp in the air fryer, making it perfect for dipping, sharing or serving alongside soups, mezze and grilled meats. Once seasoned with olive oil, garlic and herbs, these crisps disappear frighteningly quickly.
You’ll Need
Serves 4–6
For the Lavash
4 large lavash flatbreads
3 tbsp extra virgin olive oil
1 tsp garlic granules
1 tsp smoked paprika
1 tsp dried oregano
½ tsp sea salt
½ tsp freshly ground black pepper
Optional but Dangerous
Za'atar seasoning
Grated Parmesan
Chilli flakes
Hummus
Baba ganoush
Tzatziki
Method
Preheat your air fryer to 180°C.
Cut the lavash into large triangles or rustic strips using kitchen scissors or a sharp knife.
In a large bowl, combine the olive oil, garlic granules, smoked paprika, oregano, sea salt and black pepper.
Add the lavash pieces and toss gently until every piece is lightly coated.
Arrange the pieces in a single layer inside the air fryer basket, working in batches if necessary.
Air fry for 4–6 minutes, turning halfway through, until crisp, lightly blistered and golden around the edges.
Remove immediately and allow to cool for a few minutes—they'll become even crispier as they cool.
Serve alongside your favourite dips or enjoy straight from the bowl.
