
You’ll Need
For the Tutu
2 x 400g tins black beans, undrained
1 onion, finely chopped
3 garlic cloves, finely grated
1 tbsp vegetable oil
1 tsp smoked paprika
1/2 tsp ground cumin
40g cassava flour or fine cornmeal
1 tbsp cider vinegar
Sea salt and black pepper
For the Sausage & Greens
5 pork sausages
250g spring greens or cabbage, finely shredded
1 garlic clove, finely grated
1 tsp vegetable oil
Optional but dangerous
Freshly cooked rice
Hot sauce
Fried eggs
Equipment
One deep heatproof dish and one shallow heatproof tray
Method
Preheat your air fryer to 190°C.
Air fry the sausages for 9 minutes, turning once, then cool slightly and cut into thick coins.
Put the onion and oil in the deep dish and air fry for 6 minutes. Stir in the garlic, paprika and cumin.
Add the beans with their liquid and air fry for 8 minutes until bubbling.
Mash roughly, then sprinkle in the cassava flour or cornmeal while stirring until thick and spoonable.
Toss the greens with the garlic and oil on the shallow tray and air fry for 5 minutes.
Add the sausage coins to the greens and cook for 4-6 minutes until browned and 75°C.
Stir the vinegar through the tutu, divide between pots and top with the sausage and greens.
