Bread Story
Pupusas are the national dish of El Salvador, and after one bite it's easy to see why. Thick handmade corn flatbreads stuffed with gooey cheese and savoury refried beans, cooked until lightly crisp outside while staying soft and fluffy inside. They're proper comfort food and brilliant straight from the air fryer.
You’ll Need
Makes 8 pupusas
For the Dough
500g masa harina (corn flour for tortillas)
350ml warm water
1 tsp sea salt
Filling
200g grated mozzarella
150g mature Cheddar, grated
200g refried beans
1 tsp garlic granules
½ tsp smoked paprika
Freshly ground black pepper
To Finish
Olive oil spray
Optional but Dangerous
Pulled pork
Chorizo
Pickled red onions
Sour cream
Salsa
Guacamole
Method
In a large bowl, mix together the masa harina and sea salt.
Gradually add the warm water, mixing until a soft dough forms that feels like firm playdough. If it's too dry,
add a little more water.
Cover and leave to rest for 10 minutes.
In another bowl, combine the mozzarella, Cheddar, refried beans, garlic granules, smoked paprika and black
pepper.
Divide the dough into eight equal balls.
Flatten each ball into a thick disc, place a generous spoonful of filling into the centre, then carefully fold the
dough around the filling and seal completely.
Gently flatten each stuffed ball into a disc about 12cm wide and roughly 1½cm thick.
Lightly spray both sides with olive oil.
Preheat the air fryer to 190°C.
Air fry the pupusas for 10–12 minutes, carefully turning halfway through, until lightly golden with a crisp
exterior.
Leave to rest for 2 minutes before serving, as the filling will be extremely hot.
