Air Fryer Golden Syrup Semolina Pudding Pots

Semolina pudding is nursery food in the best sense: milk, grain, nutmeg and warmth turned into something calm and substantial. Golden syrup at the bottom becomes a dark sauce beneath the creamy pudding. Low covered heat prevents a skin forming before the semolina has thickened.

You’ll Need

For the Pudding Pots
800ml whole milk
80g fine semolina
40g caster sugar
25g butter
1 tsp vanilla extract
1/4 tsp ground nutmeg
Pinch of sea salt
8 tbsp golden syrup
Optional but dangerous
A spoonful of jam
Cold milk
Extra nutmeg
Equipment
Four 450ml heatproof ramekins, a shallow heatproof tray and foil

Method

Warm the milk until steaming but not boiling.

Whisk in the semolina, sugar, butter, vanilla, nutmeg and salt until smooth.

Spoon 2 tablespoons of golden syrup into the bottom of each ramekin.

Divide the milk mixture between the ramekins and cover each tightly with foil.

Set the ramekins in the tray and preheat the air fryer to 150°C.

Air fry for 15 minutes, stir each pot carefully, re-cover and cook for 10 minutes more.

Remove the foil and air fry at 185°C for 4-7 minutes until lightly coloured and softly set.

Rest for 5 minutes; the semolina thickens as it cools.

Lad Tip: Whisk the semolina into hot milk in a steady stream. Throw it in as one confident heap and every pot comes with its own collection of tiny dumplings.
