Bread Story
Some of the best meals ever made start with a warm tortilla. Fresh from the air fryer, these soft Mexican flour tortillas are light, flexible and full of flavour. Perfect for burritos, fajitas, tacos, quesadillas or simply torn into pieces and eaten while they're still warm.
You’ll Need

For the Dough
500g plain flour
2 tsp sea salt
2 tsp baking powder
75g lard or vegetable shortening
300ml warm water
To Finish
Melted butter (optional)

Pulled beef
Chicken fajitas
Slow-cooked pork

Salsa
Grated Cheddar

Method
In a large bowl, combine the plain flour, sea salt and baking powder.
Rub the lard or vegetable shortening into the flour until it resembles fine breadcrumbs.
Gradually add the warm water, mixing until a soft dough forms.
Knead for 6–8 minutes until smooth and elastic.
Cover and leave the dough to rest for 30 minutes.
Divide into eight equal portions and roll each into a ball.
Roll each ball into a thin circle approximately 20–22cm in diameter.
Preheat the air fryer to 200°C.
Air fry each tortilla for 1½–2 minutes, turning halfway through. They should develop light golden patches
while remaining soft and flexible.
Stack the cooked tortillas immediately under a clean tea towel to trap the steam and keep them beautifully
soft.
Brush lightly with melted butter if serving on their own.
