Air-Fryer Uzbek Non Bread preparation stage

You’ll Need

Makes 1 large loaf
For the Dough
500g strong white bread flour
7g fast-action dried yeast
1 tsp caster sugar
2 tsp sea salt
300ml warm water
2 tbsp vegetable oil
100ml whole milk
Glaze
1 egg yolk
1 tbsp milk
Topping
1 tbsp sesame seeds
1 tsp nigella seeds
1 tsp poppy seeds (optional)
Optional but Dangerous
Salted butter
Lamb kebabs
Hummus
Soft white cheese
Fresh herbs

Method

In a large bowl, combine the flour, yeast, caster sugar and sea salt.

Add the warm water, milk and vegetable oil, mixing until a soft dough forms.

Knead for 8–10 minutes until smooth and elastic.

Cover and leave to rise for approximately 1 hour, or until doubled in size.

Shape the dough into a large round loaf approximately 22cm across.

Place onto baking paper and leave to prove for another 30 minutes.

Mix together the egg yolk and milk to make the glaze.

Brush the loaf generously with the glaze.

Using your fingertips or the base of a small glass, gently press down the centre of the loaf, leaving a raised

border around the outside. Prick the flattened centre several times with a fork to prevent it from rising too much

during cooking.

Sprinkle over the sesame, nigella and poppy seeds.

Preheat the air fryer to 180°C.

Air fry for 22–26 minutes, until beautifully golden with a crisp crust and soft, chewy centre.

Transfer to a wire rack and allow to cool slightly before tearing into generous wedges.

Lad Tip: That pressed centre is one of the trademarks of Uzbek non. It keeps the middle flatter while the outer ring rises, giving you the classic bakery look and plenty of crisp, chewy texture in every slice.
